ENCHILADA CASSEROLE 
1 1/2 lb. ground beef
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes with green chilies, diced
14 oz. bag Doritos chips (Mexican flavored, ie taco, etc.)
1 lb. grated longhorn or Cheddar cheese
1 med. onion, finely chopped

Mix together both soups, onion, tomatoes and 1 soup can of water; salt and pepper. Brown ground beef; drain.

In large casserole dish, layer as follows (ending with cheese on top). Chips, beef, soup mixture, grated cheese. Cover dish and bake at 350 degrees (or until cheese is bubbling) about 30 minutes.
