WALNUT COCONUT OATMEAL CHEWS 
2 c. quick cooking oatmeal
1 c. brown sugar
1/2 c. salad oil
1/2 tsp. salt
1 tsp. vanilla
2 eggs, slightly beaten
3/4 c. walnuts, chopped
1 c. flaked coconut

Mix oatmeal, sugar, and oil. Let stand several hours in the refrigerator in a large bowl. Add salt, vanilla, eggs, walnuts, and coconut. Mix well. Drop with a spoon on a greased cookie sheet. Put into 2 inch rounds.

Bake at 350 degrees for 10-15 minutes, or until golden brown. Makes 2 to 2 1/2 dozen.
