RED CABBAGE SLAW 
2 lbs. red cabbage
3 c. boiling water
1 tbsp. salt
1/4 c. cooking oil
1/3 c. lemon juice
1/4 tsp. pepper
2 tsp. sugar or lo cal sweetener
1/4 minced onion
1/2 c. grated apple

Shred cabbage, add to boiling water, salted. Let stand 10 minutes, drain. Add remaining ingredients to cabbage and toss and mix well. Chill 30 minutes before serving. Makes 6-8 servings.
