ITALIAN CREME CAKE | |
1/2 c. butter 1/2 c. shortening 2 c. sugar 5 egg yolks 2 c. flour 1 tsp. baking soda 1/8 tsp. salt 1 c. buttermilk 1 tsp. vanilla 1 c. flake coconut 1 c. pecans, chopped 5 egg whites FROSTING: 1 (8 oz.) cream cheese 1/4 c. butter 1 box powdered sugar 1 tsp. vanilla Cake directions: Cream butter, shortening until well blended. Add sugar gradually. Add well beaten egg yolks. Add sifted flour, soda and salt alternately with buttermilk. Add vanilla, coconut and chopped nuts. Fold in stiff beaten egg whites. Bake in 3 layers at 350 degrees, 25 minutes. Frosting directions: Cream cheese and butter well. Add sugar and vanilla, mix well. Frost cake and sprinkle with a few chopped nuts. "Our family special birthday cake." A Blue Ribbon winner! |
