SPAETAZLE 
4 qt. water
1 1/4 tsp. salt
1 3/4 c. flour
Dash white pepper
Dash nutmeg
2 eggs, beaten with 2/3 c. water
2 tbsp. butter

Bring 4 quarts water to a boil with 1 teaspoon salt. Combine flour, remaining 1/4 teaspoon salt, pepper, and nutmeg. Add egg mixture, beating just until thick batter is formed.

Drop a half teaspoon of batter at a time into boiling water. When spaetzle rise to surface, cook for 1 minute. Remove with slotted spoon. Repeat with remaining batter. When all spaetzle is cooked, toss with butter.
