CHEESE BLINTZES 
PANCAKES:

1 c. flour
4 eggs, beaten well
1 1/3 c. milk
2 tbsp. butter, melted

FILLING:

1 lb. Farmer cheese
2 eggs, beaten
4 tsp. butter, melted
2 tbsp. sugar
Pinch of salt

PANCAKE: Combine beaten eggs, milk and butter, add flour; beat until smooth. Pour enough batter into a hot greased frying pan to make one pancake about 6 inches in diameter and as thin as possible. Fry only one side until blistered. Turn on to wax paper until all are fried. Place a tablespoon of filling in center of each cake on the fried side. Fold over all 4 sides. Bake on griddle or fry pan until brown on both sides.
