CHEESE SOUFFLE 
1/2 c. skim milk
1 egg, separated
1 oz. sharp Cheddar cheese
1 slice bread made into crumbs
1/8 tsp. salt
Dash pepper

Combine skim milk, egg yolk, cheese, bread crumbs, salt, pepper in sauce pan. Heat until thickened, stirring constantly. Let cool. Beat egg whites until stiff. Fold in cheese mixture. Bake in souffle dish in oven 375 degrees for 25 minutes. May put in individual serving dishes to bake.
