BAKED TOMATO CASSEROLE | |
2-3 tbsp. bacon fat 2-3 tbsp. minced onion 1 to 1 1/2 qt. canned tomatoes 7-10 pieces sliced bread 6-8 oz. Cheddar or Colby cheese, shredded or sliced Combine bacon fat and onion in a pot and cook over medium heat, until brown is tender. Meanwhile, mash tomatoes until in small pieces. Add mashed tomatoes to onions and heat through. Let it simmer while you toast bread. Grease a 2 1/2 quart baking dish. Add spoonfuls of tomatoes to coat bottom of dish. Break up half of toast into dish. Cover with half of tomato mixture, then half the cheese. Repeat the layers. Bake uncovered in 375 degree oven for 40-45 minutes. Reheats well. Can also be cooked in crock pot, 1-2 hours. |
