DANISH JAM TARTS | |
1 1/2 c. all-purpose flour 1 stick butter 1/3 c. sugar 1 egg 1 tsp. baking powder 8 oz. jam Recipe makes 2 tarts. Combine flour, butter, sugar, egg and baking powder. Mix well with fork or pastry blender. Divide dough into 4 equal parts. Use one part of dough, press onto bottom and 1/2 inch up sides of an 8 or 9 inch cake pan. (Best to use the type with a loosening bar built into the pan.) Spread 4 ounces jam evenly over dough. Using the second piece of dough, roll out thin strips and cover the tart in a diamond-shaped criss-cross pattern. Use a pastry roller to spread dough evenly. Repeat procedure for second tart. Bake in middle of oven at 350 degrees for 25 minutes. Sprinkle with powdered sugar when cool. Cut into pie wedges to serve. Freezes well. |
