SWEET POTATO AND APPLE CASSEROLE 
2 lb. sweet potatoes
2/3 c. light brown sugar
1/2 c. apple cider
1 tbsp. lemon juice
1/2 tsp. ginger
1 1/2 lb. apples, peeled & sliced
6 tbsp. butter
3 tbsp. maple syrup
1 tsp. cinnamon

Cook potatoes in boiling water until barely tender. Drain, cool, peel and cut potatoes into crosswise slices 1/4 inch thick. In a small saucepan bring sugar, butter, cider, syrup, lemon juice, cinnamon and ginger to a boil. Reduce heat and let simmer for 10 minutes.

Arrange overlapping slices of apples and potatoes in a greased 9 x 13 inch pan. Pour sauce over all and bake at 325 degrees for 20 minutes, basting occasionally until apples are tender.
