GERMAN PANCAKES 
3 eggs
1/2 c. flour
1/2 c. milk
1 tbsp. butter
Fresh fruit (bananas, strawberries), cut up

Preheat oven to 425 degrees. Heat an empty pie plate (8 or 9 inch) in the oven. Melt the butter in the bottom of the pie plate. Blend eggs, flour and milk. (Blender, food processor, egg beater or whisk.) Pour batter into pie plate. Bake in oven about 25 minutes. Edges will rise very high. Serve pancakes with fresh fruit and Vermont maple syrup.
