CHICKEN CASSEROLE 
1 med. onion, chopped
1 can water chestnuts
1 sm. jar pimento
1/3 stick butter
2 cans French style green beans (drained)
1 can celery soup
1 c. mayonnaise
3 c. boiled chicken (diced)
1 c. rice (cooked in chicken broth)
8 oz. Cheddar cheese

Preheat oven to 300 degrees. Melt butter in pan and saute onion, water chestnuts and pimento. In a large pot, combine all ingredients and stir to blend. Pour into 1 large (or 2 small) casserole). Top with cheese. Bake at 300 degrees for 25-30 minutes. (May be frozen to bake later.)
