BLACK-EYED PEA SALAD 
2 (10 oz.) pkgs. frozen black-eyed peas
1 c. bottled Italian dressing
2 tsp. sugar
1/4 tsp. crushed red pepper
1/2 c. sliced celery
1/2 c. chopped green pepper
1/4 c. chopped pimiento
4 to 5 green onions, thinly sliced
1/4 c. chopped parsley
Salt and pepper
Lettuce leaves

Cook peas as directed on package; drain. Shake Italian dressing, sugar and crushed red pepper in tightly covered container until well blended.

Combine cooked peas, celery, green pepper, pimiento, green onions and parsley. Gently toss pea mixture and salad dressing. Season with salt and pepper. Chill. Serve on lettuce leaves. Makes 4 to 6 servings.
