CHINESE SPARERIBS | |
Approximately 4 lbs. sm. lean spareribs 1 clove garlic, minced 1 tsp. grated fresh ginger or 1/4 tsp. powdered 1 tbsp. sugar 1/4 c. water 1 c. soy sauce 1/2 c. red wine Score (or completely cut through) ribs. Put in a large bowl or shallow enameled or stainless baking pan. Mix rest of ingredients and pour over ribs. Marinate at least 30 minutes on each side. If cut into individual pieces, you can marinate overnight in recloseable plastic bag in refrigerator. Drain ribs. Place on grill over medium coals or in roasting pan in 350 degree oven. Cook about 1 1/2 hours, turning and basting frequently. If not cut, cut with kitchen shears and serve with Chinese Mustard and Duck sauce. Makes 20-30 appetizers or serves 4 as entree.
