SKILLET CORNBREAD 
2 c. enriched white cornmeal
3 tbsp. flour
1 tbsp. baking powder
1/2 tsp. salt
1 3/4 c. milk or buttermilk
1 egg, beaten
3 tbsp. Crisco
1 tsp. baking soda

Heat oven to 450 degrees. Sift dry ingredients; add egg. Stir 1 teaspoon of baking soda in 1 3/4 cups of milk and stir. Add to mix and mix well. Melt 3 tablespoons Crisco in skillet or 8 or 9 inch square pan. Melt drippings or Crisco until hot. Pour into batter; mix well and pour into hot skillet and put in oven at 450 degrees and bake 20 to 25 minutes or until wooden pick comes out clean. Makes 9 to 10 servings.
