TARTAR SAUCE 
1 c. mayonnaise
1/2 tsp. dry mustard
1 tbsp. plus 1 tsp. finely chopped green onion
1 tbsp. chopped sweet pickle, drained
1/2 clove garlic, minced
1 tsp. capers (optional)
1 tsp. tarragon vinegar or lemon juice
Salt to taste
Cayenne pepper to taste

In a small bowl, mix all ingredients together. Make at least 1/2 hour before using for flavors to blend. Keep refrigerated in closed container. This keeps for several weeks. Makes 1 1/4 cups.
