STIR-FRY BEEF (MICROWAVE) 
2 lbs. steak (sirloin, round, flank or chuck)
2 lg. green peppers, cut into strips
3 green onions, 1 inch slices with tops
1/4 c. water
1/4 tsp. ginger
3 tbsp. salad oil
2 tbsp. sugar
1 tbsp. cornstarch
1/2 c. soy sauce
1 clove minced garlic

Slice steak diagonally across grain in 1/8 inch thick slices. Freeze for 30 minutes to slice easier.

In 2 cup glass measure combine sugar, soy sauce, garlic and ginger. Pour over meat in medium bowl; marinate 30 minutes, turning meat after 15 minutes.

Preheat browning skillet (high) 6 minutes or fry pan on range very hot. Remove meat from marinade, reserve extra. Add oil and meat. Microwave (high) 5-6 minutes, stirring halfway through cooking. Add green peppers and onion, microwave (high 3-4 minutes, stirring halfway through cooking.

In a 1 cup glass measure combine cornstarch, water and remaining marinade. Microwave (high) 1-2 minutes, stirring once or twice until thick. Pour over stir-fry. Microwave (high) 1-2 minutes more. Rest 5 minutes. Serve on cooked rice. Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
