CHEROKEE CASSEROLE 
1 lb. ground beef
1 medium onion, chopped
1 can cream of mushroom soup
1 (16 oz.) can tomatoes, cut up
1 cup Minute Rice
1/4 tsp. oregano
1/4 tsp. thyme
1 can mixed vegetables (or vegetable of your choice; can omit entirely)
Cheese, type and quantity of your choice

Brown ground beef and onion; drain. Add remainder of ingredients except cheese. Simmer 10 minutes. Pour into casserole dish and top with cheese.

Bake at 350°F until bubbly.
