HEARTY SOUP MIX 
16 oz. dried lentils
16 oz. split green peas
16 oz. pearl barley
16 oz. brown rice
16 oz. alphabet macaroni
2 c. dried onions

Mix all ingredients in large container. Package in plastic bags in 1 1/2 cups amounts. Seal. Makes about 9 cups. Proceed to next step when ready to make a recipe of soup.

HEARTY SOUP (Beef or Poultry) :
8 c. water (or more)
1 1/2 tbsp. salt or some salt & some bouillon cubes
1 1/2 c. Hearty Soup Mix
2 carrots, diced
1 1/2-2 c. shredded cabbage
1 lg. can tomatoes
1 lb. leftover meat, cut up or 1 lb. ground beef, browned

Add 1 cup tomato juice if soup is made with beef. Put water, salt (or bouillon) and soup. Mix in a large kettle. Bring to a boil, cover and simmer (very gently) for 1 1/2 hours. Add carrots, cabbage, meat, tomatoes (and tomato juice if making beef soup). Simmer until vegetables are tender. Makes about 3 quarts. Sometimes the soup gets too thick so I add a little more water and another bouillon cube. Freezes well.
