SHRIMP PIE 
1 med. onion, chopped
1 med. bell pepper, chopped
4 garlic cloves, minced
3 small ribs of celery, chopped
1/4 lb. of butter
2 lbs. of peeled raw shrimp
2 heaping tbsp. of flour
1 can of mushroom soup
1 sm. can of mushrooms, optional
Salt to taste
Red pepper to taste
1/2 c. chopped green onion tops (optional)
1 (9 inch) unbaked double pie crust

Wilt onion, bell pepper, garlic and celery in butter. Cut shrimp into bite size pieces; add shrimp and cook until pink, five to ten minutes. Add flour; blend and add soup (plus one small can of mushrooms, if desired), salt, pepper and green onion tops.

Simmer about 10 minutes; pour into crust and cover with top crust. Bake at 400 degrees about 30 minutes or until crust is golden brown.
