SHEPHERD PIE CASSEROLE 
1 lb. ground beef
1/2 c. chopped onions
1 1/2 c. drained, cooked frozen vegetables or 1 med. size can of drained mixed vegetables
1 1/2 c. mashed potatoes
1/2 c. shredded cheese

Cook ground beef and onion in a large skillet until meat is browned, stirring to crumble. Drain off pan drippings; stir in drained mixed vegetables. Spoon meat mixture into 2 quart casserole. Spread potatoes evenly over meat mixture. Bake at 350 degrees for 20 minutes. Remove from oven; sprinkle with cheese. Bake 5 additional minutes or until cheese melts. Yields 6 servings.
