PINEAPPLE GLAZED CHICKEN 
1 lb. boneless uncooked chicken
2 tbsp. oil
1/2 green pepper, cut in 1 inch pieces
1/2 med. onion, cut in 1/2 inch pieces
1 (8 oz.) can pineapple chunks
2 tbsp. soy sauce
1 tbsp. cornstarch

Cut chicken in 1 inch pieces to make about 1 1/2 cup chicken. Saute chicken for 2 minutes. Add pepper and onion, stir fry until chicken is tender. Drain pineapple, reserving juice. In small bowl, combine pineapple juice, soy sauce, and cornstarch; pour over chicken. Stir fry until sauce has thickened slightly and chicken and vegetables are well coated. Serve over rice.
