ARIZONA SUNDAY MEAT LOAF 
1 pound ground beef
1/2 cup oatmeal
1/4 cup green chilies, chopped
1/4 c. milk
1 small diced onion
1 egg
1/2 teaspoon salt
1 teaspoon chili powder, mild
1 clove garlic
ketchup for top before baking

Mix together and make into a mound in a small baking dish. Top with ketchup and sliced cheese if desired.

Bake at 350°F for 1 hour or until thermometer registers 165°F. Cool 10 minutes before serving.

I bake small potatoes wrapped in foil in same oven but start potato 30 minutes before meatloaf. Makes great leftovers.
