BEEFY MEXICAN LASAGNA 
1 lb. ground beef
1 (16 oz.) can whole tomatoes, cut up
1 pkg. taco seasoning
1 (2.8 oz.) can French fried onions
1 c. Cheddar cheese
2 slightly beaten eggs
12 (6 inch) flour or corn tortillas
1 chopped tomato
2 c. shredded lettuce

Brown beef, drain, add canned tomatoes and seasoning, and simmer uncovered for 5 minutes. Stir in 1/2 can of fried onions. Combine cottage cheese 1 cup of Cheddar cheese and eggs. Place 3 tortillas on bottom of 8 x 12 greased pan. Overlap 6 tortillas around sides. Spoon meat mixture.

Bake covered at 350 degrees for 45 minutes. Sprinkle wiht remaining cheese and onions. Bake uncovered 5 more minutes. Arrange tomatoes and lettuce around edge before serving. Makes 6 servings.
