MACARONI CALICO SALAD 
2 c. cooked macaroni
1/4 c. olive oil
1 tbsp. lemon juice or vinegar
1 c. fresh parsley, minced
1 c. raw zucchini, diced
1 c. fresh tomatoes, peeled, seeded, chopped
3 green onions, chopped fine
1/2 c. stuffed green olives, sliced
1 c. roasted sweet red pepper, diced
1 c. roasted sweet green pepper, diced
1 c. yogurt
1 tsp. salt
1/2 tsp. black pepper
1/8 tsp. cayenne pepper
1/4 c. chives, chopped

Toss macaroni in oil, lemon juice and parsley. Prepare zucchini, tomatoes, onions, olives and pepper. Combine them with macaroni, mix yogurt, salt, pepper and cayenne. Season to taste. Sprinkle the chives on top. Cover and refrigerate at least one hour to blend flavors.
