MONTERREY SUNDAY SUPPER 
3 c. brown rice, cooked
1 1/2 lbs. Monterey Jack cheese, 1/2 sliced and 1/2 grated
2 (7 oz.) cans green chilies (or more)
2 lg. tomatoes, sliced
2 to 3 zucchinis, sliced
1 pt. sour cream
1 clove garlic, minced
2 scallions, chopped
1 tsp. oregano
Salt and pepper to taste
Wheat germ (optional)

Layer ingredients in 13 x 9 inch baking pan in following order: Brown rice, green chilies, sliced cheese, tomatoes, and zucchinis. Mix together top layer: Sour cream, grated cheese, garlic, spices, and scallions. Sprinkle with wheat germ, if desired. Bake at 350 degrees for 45 minutes or until bubbly.
