ZUCCHINI PINEAPPLE BREAD | |
3 eggs 2 c. sugar 1 c. cooking oil 2 tsp. baking powder 2 tsp. baking soda 1 c. chopped nuts 1 c. raisins (optional) 2 tsp. vanilla 3 c. flour 1 tsp. salt 1/2 tsp. nutmeg 2 tsp. cinnamon 1 c. well-drained pineapple 2 c. grated zucchini Beat eggs, vanilla, sugar, oil until fluffy. Fold in flour and spices; do not over beat. Stir in zucchini and pineapple. Put into 2 small or 1 large floured and greased pan. Bake at 350 degrees for 1 hour or until center of bread is done. Cool 20 minutes. Remove from pan. |
