PINEAPPLE ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 tsp. vanilla 2 c. grated zucchini 1 (8 oz.) crushed pineapple, drained 1 1/2 c. whole wheat flour 1 1/2 c. white flour 1/2 tsp. baking powder 2 tsp. baking soda 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. nuts, chopped Beat eggs, sugar, oil and vanilla until light yellow. Fold in zucchini and pineapple. Mix dry ingredients together, add to zucchini mixture. Pour into two 9 x 5 x 3 inch bread pans that have been greased and floured. Bake for 1 hour until done. |
