ZUPER ZUCCHINI CASSEROLE 
1 lb. zucchini, shredded or grated
2 tbsp. grated onion
1 1/2 c. bacon flavored cracker crumbs with 1/4 c. melted butter (save 1/2 c. crumbs for top)
1 egg, beaten
1/2 c. cheddar cheese, grated
1/2 tsp. salt
1/4 tsp. pepper
Bell pepper or chile pepper (opt.)

Mix all except buttered crumbs; place in greased 8" cake pan or 2 quart casserole (double fits 9"x13" cake pan well). Sprinkle crumbs on top. Bake at 325 degrees for an hour. Very popular pot luck dish. Can be frozen before or after baking so it's a great way to freeze that field of zucchini in your garden. Reheats nicely in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
