ITALIAN NUT BALLS 
3/4 c. sugar
1 tsp. salt
3/4 c. softened butter
2 egg yolks (save whites)
1/2 tsp. vanilla
1/2 tsp. almond extract

Combine and blend well above ingredients. Add 2 cups flour gradually and blend well. Roll dough into balls and dip in lightly beaten egg whites, then finely chopped nuts. (You need about 1 cup nuts.)

Place on greased cookie sheet. Make a deep depression in center of cookie with thumb. Bake at 350 degrees for 10-12 minutes.

While warm, fill centers with small amount of jelly or preserves. Sprinkle with powdered sugar. Cool; serve.
