ZUCCHINI MUFFINS 
3 slices Dorman's Provolone, grated in electric blender
2 c. shredded zucchini
3 tbsp. finely chopped onion
1/2 c. seasoned bread crumbs
1/2 tsp. salt
2 eggs
Vegetable oil

Combine all ingredients except vegetable oil. Stir with a fork until well blended. Heat 1 teaspoon vegetable oil in each muffin cup. Carefully spoon batter evenly into cups. Bake at 375 degrees for 20 minutes or until golden brown and puffed. Makes 12 large or 24 small muffins.
