CARROT OR TURNIP SOUP 
2 tbsp. chopped onion
2 tbsp. butter
2 tbsp. flour
1 qt. hot milk
1 c. grated raw carrots or turnips
Salt and pepper to taste

Saute onion in butter for a few minutes. Blend in flour; add milk gradually, carrots or turnips, salt and pepper. Cook stirring frequently, until carrots or turnips are tender, about 10 minutes. Serves 4.
