ZUCCHINI AND TOMATO 
2 tbsp. butter
1/2 c. chopped green pepper
1/4 c. chopped onion
2 c. sliced zucchini, 1/2 inch thick (about 3 sm.)
1/2 c. soft bread crumbs
1/4 c. grated Parmesan cheese
1 tsp. salt
Dash pepper
2 c. tomato wedges
1/2 c. shredded Cheddar cheese

Melt butter and saute green pepper and onions. Add zucchini, bread crumbs, Parmesan cheese, salt and pepper. Turn into 1 1/2 quart covered casserole. Bake at 375 degrees for 20 minutes. Add tomatoes and bake 10 minutes more. Melt Cheddar cheese on top and serve.
