MACARONI AND CHEESE CASSEROLE 
1 c. macaroni
2 tbsp. shortening
1/2 tsp. salt
1/2 lb. Cheddar cheese
2 tbsp. butter
1 1/2 c. milk
1/8 tsp. pepper
1/2 c. buttered crumbs

Cook elbows 15-20 minutes. Drain. Place in buttered casserole.

Melt butter in double boiler. Add flour, salt and pepper and blend. Add milk slowly until sauce thickens. Cut cheese into cubes, add to sauce. Stir constantly until cheese has melted. Pour cheese sauce over elbows and top with bread crumbs. Bake in moderate oven (350 degrees) 30 minutes. Serves 2-3.
