SCARLET O'HORSERADISH SALAD 
SALAD:

1 head Romaine, torn to bite-sized pieces
2 cucumbers, sliced

DRESSING:

1 c. sour cream
1 sm. onion, minced
1 1/2 tbsp. sugar
1 1/2 tsp. salt
2 c. diced beets, pickled or canned
5 tbsp. horseradish
1 garlic

Place lettuce in salad bowl or platter. Arrange cucumbers over lettuce. Mix dressing and serve over top. Serves 6-8.
