CHICKEN A LA CACCIATORE 
1 (2 lb.) broiler
3 tbsp. olive oil
4 cloves of garlic, minced
Salt to taste
Pinch of crumbled oregano
2 leaves basil, crushed
3/4 of (#2) can of solid packed tomatoes, mashed
1/4 c. sherry
1 tbsp. parsley, minced
1 (4 oz.) can button mushrooms or 1 c. sliced mushrooms
2 tbsp. vegetable shortening

Disjoint broiler. Heat olive oil in a deep frying pan. Add chicken, seasonings with minced garlic, salt, pepper, oregano and basil. Brown chicken on both sides. Add tomatoes; cover and cook until barely tender.

In separate pan, saute mushrooms in shortening and add to chicken. Cover and cook for 15 minutes. Remove cover and add sherry; cooking uncovered for 10 minutes and sprinkle with parsley. Yields 3 portions. (May add with vegetable, 1 cup green pepper, chopped fine.)
