PINA COLADA COOKIES 
1/4 c. butter, softened
8 oz. cream cheese, softened
2 eggs
1 c. flaked coconut
3 tsp. rum extract
Powdered sugar
1 pkg. yellow cake mix
3 tsp. pineapple extract

Heat oven to 375 degrees. Cream butter and cheese until light and fluffy. Beat in eggs and half of cake mix. Stir in rum and pineapple extracts. Beat until smooth. Stir in remaining cake mix and coconut. Drop by teaspoonfuls onto ungreased cookie sheets. Bake 8-10 minutes. Cool slightly on baking sheet. Dip tops in powdered sugar.
