CHICKEN - SAUSAGE GUMBO 
6-8 pieces chicken (breasts, legs, thighs)
1 lg. white onion, cut up
1 bunch green onions, cut up
2 links summer sausage, cut up
8 tbsp. flour
Cooking oil
Creole seasoning
Salt & pepper

In a Dutch oven, brown the flour in the cooking oil. Add enough cooking oil to flour to absorb the flour, but not saturate it. Stir flour constantly until it becomes a dark brown. (It will look like burned flour, but that's okay.) After browning the flour, fill approximately 1/2 of the Dutch oven with water. Add chicken, sausage and onions (green and white) to the water. Cook for several hours. You may season to taste with creole seasoning, salt and pepper. Serve over rice.
