MEXICAN RICE 
2 c. water, boiling
1 c. rice
1 lg. carton sour cream
1 sm. can chopped green chilies
1 lb. Monterey Jack cheese

Cook rice in water. Place rice in casserole. Add sour cream, green chilies, and cheese. Mix well and bake in 350 degree oven for 30 minutes.
