MOZZARELLA-TOMATO SALAD 
3 ripe, fairly lg. tomatoes, sliced
1/3 lb. Mozzarella cheese, sliced
2 tbsp. olive oil
1 tbsp. lemon juice or red wine vinegar
3 tbsp. finely chopped basil
1 red or Bermuda onion, sliced in rings

On a long narrow dish arrange in alternating layers first the tomatoes, then the onion rings, then the Mozzarella slices to cover. Dribble over all the oil and vinegar or lemon juice and season with salt and freshly ground pepper. Cover until green with chopped basil.
