WIENERS AND CORN BREAD | |
Choose 1 or 1 1/2 of your favorite brand of hot dog per person 1 pkg. Jiffy corn bread mix 1 egg, milk or water to make 1/2 cup, when added to the egg 2 or 3 tbsp. oil, it should float in the pan - heat until very hot just before adding mix 1 tbsp. chopped green onions 1 tbsp. chopped parsley (optional) Boil hot dogs for a few minutes. Following directions on Jiffy package, add milk and egg. Stir very lightly. Add onion and parsley. The traditional pan for making corn bread is an iron "spider" or frying pan....and this works best here...one 7 or 8 inch is just right for this amount. The corn bread shouldn't be too thick when finished. It should bind the wieners like a bun....or corn dog. Cut the hot dogs about bite size or a little larger, and "poke" them into the corn meal mix which you have put into the hot oil. Bake at 400 degrees for 12 to 15 minutes. |
