SQUASH CASSEROLE 
2 lb. yellow squash, sliced
1 sm. onion, chopped
1/2 green pepper, chopped
1/3 c. butter
2 eggs, beaten lightly
1/2 c. milk
1/2 c. grated sharp cheddar cheese
1 tsp. sugar
6 soda crackers, crumbled
Salt and pepper to taste
Cracker crumbs

Cook squash in boiling, salted water to cover until just tender. Drain and set aside.

Meanwhile, saute onions and green peppers in butter until tender. Add to cooked squash with eggs, milk, cheese, sugar and soda crackers. Season with salt and pepper. Spoon into a greased casserole; top with additional cracker crumbs. Bake at 325 degrees for 1 hour. May be made ahead and frozen before baking.
