LEMON DELIGHT 
1 lg. pkg. lemon Jello
2 c. boiling water
2 c. ginger ale
1 c. crushed pineapple, drained
1 1/2 c. sm. marshmallows

Bring water to boil; add Jello, ginger ale, and all other ingredients. Pour in 9 x 12 inch dish and let jell.

Add in pan 1 cup pineapple juice, 3 tablespoons cornstarch, 1 beaten egg, and 1 cup sugar. Cook all ingredients on slow heat. Cook until clear and thick. Add 1 cup Cool Whip. Spread on cool Jello mold. Add cup grated cheddar cheese. Sprinkle evenly over the other spread.
