ITALIAN SAUSAGE 
1 lb. ground pork
1 med. onion, finely chopped
1 sm. garlic clove, mashed
1/2 tbsp. salt
1/2 tsp. each ground pepper and fennel seed
1/4 tsp. paprika
1/8 tsp. each ground thyme and cayenne pepper

Combine salt and spices. Mix onion and garlic thoroughly with ground pork. Sprinkle spice mix on meat mixture, mix thoroughly. Form into patties, meatballs, or stuff into casings. Patties and meatballs can be fried, casings can be boiled and then fried.
