MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. Karo light corn syrup
1/8 tsp. salt
1 1/2 c. roasted peanuts or cashews or mixed nuts
1 tsp. corn oil butter
1 tsp. baking soda
1 tsp. vanilla

Spray cookie sheet and metal spatula with cooking spray. In 2-quart microwavable glass bowl or measuring cup, stir sugar, corn syrup and salt with wooden spoon until well mixed. Microwave at high 7 to 8 minutes or until syrup is pale yellow. (Syrup is very hot, handle carefully. Do NOT touch hot mixture.)

Stir in nuts. Microwave 1 to 2 minutes, or until nuts are lightly browned. Immediately stir in butter, vanilla and baking soda until foamy. Quickly pour onto cookie sheet and spread evenly with spatula. Cool. Break into pieces. Store in tightly covered container. Makes about 1 1/4 pounds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
