VEGETABLE - MILLET CASSEROLE 
1 c. Millet (found in health food stores), a complete protein and inexpensive
2 c. chopped vegetables (carrot, squash, broccoli, or green beans)
1 c. chopped onions
2 tbsp. oil
3 c. water
2 or 3 c. cheese (Colby, Cheddar, Monterey Jack, one or combination of all three)

Saute onions and vegetables in oil until onion is clear. In large pan, heat millet with burner on medium to medium-high. Do not burn. Stir water into millet, cook on medium with lid on for 30 minutes.

Remove lid, combine sauteed vegetables and replace lid. Cook on low for another 30 minutes, stirring occasionally. Stir in half of cheese. Put all of mixture in large casserole dish. Top with remainder of cheese and broil only long enough to melt top cheese.
