CHICKEN PICCATA 
Flatten chicken breasts (1 1/2 lbs.)
Salt
Flour
1/3 c. chicken broth
2 tbsp. lemon juice
Lemon slices

Flatten chicken with a mallet. Sprinkle with salt. Coat with flour. Brown in butter in a heavy skillet. Cook 3 or 4 minutes on each side (or until brown). Remove to platter and keep warm in 200 degree oven. Add chicken broth to skillet and stir to release brown bits from bottom of skillet. Add lemon juice and cook about 2 minutes until sauce is syrupy. Pour over chicken pieces and garnish with lemon slices.
