BEST CARROT CAKE | |
1 1/2 c. corn oil 2 c. sugar 3 eggs 2 c. flour 2 tsp. baking soda 2 tsp. vanilla 1 tsp. salt 2 c. carrots, shredded 1 c. walnuts, chopped 1/2 c. crushed pineapple Combine all ingredients in large bowl and mix until well blended. Pour batter into 9 x 13 inch buttered pan and bake at 350 degrees for 1 hour. After cooling, ice with Cream Cheese Icing. CREAM CHEESE ICING: 3 oz. cream cheese 1/2 c. butter 1 1/4 c. powdered sugar 1/8 c. pineapple, crushed 1/4 c. walnuts, chopped Cream cheese, butter and sugar together until slightly fluffy. Mix in pineapple and walnuts. |
