OLD VIRGINIA CARAMEL PIE 
1/4 c. butter
1/2 c. sugar
3 eggs, well beaten
1 tsp. cornmeal
1 c. seeded plum preserves
3/4 c. milk
Unbaked pastry shell
1 tbsp. lemon juice (opt.)

Cream butter and add sugar gradually. Add eggs and meal. Add preserves that have been blended well with the milk. Bake in pastry shell at 350 degrees for 25 minutes. The lemon juice stated in this recipe greatly enhances the flavor of this pie.
