CARAMEL PIE 
1 c. butter
1 c. sugar
1 c. plum preserves, chopped to avoid lg. pieces of plum
5 eggs, separated
2 tsp. vanilla

Beat egg yolks and sugar together until light. Add preserves and melted butter. Add vanilla. Beat egg whites stiff and add last. Pour into 2 unbaked pie crusts. Bake at 400 degrees for a short time, but then reduce the heat to about 350 degrees. It browns quickly but need to be cooked until the middle is set.
